How the garlic year works

Garlic cloves are planted in autumn and grow through winter, forming bulbs that are lifted in spring. The freshly harvested bulbs are then cured (dried until the skins are papery and the necks tight), which is what allows garlic to be stored and shipped over many months. So a single spring harvest supplies both an early new-crop window and a long stored-supply period.

New-crop window (March to June)

The season opens as the spring crop is harvested and cured. Fresh new-crop garlic begins exporting from around April, building through to June — the prime period for quality and choice, with the EU, the Gulf, Brazil and Asia active.

Stored supply (July onward)

Well-cured garlic moves into cool, dry (or cold) storage and ships through the second half of the year, keeping Egypt in the market long after harvest. Dehydrated garlic, produced from the crop, is available year-round for processors.
